14 – Urgent Sweet Tooth Fix

WEEK 14 – URGENT SWEET TOOTH FIX – GLUTEN FREE CUPCAKES – MY VERSION

Of course, this should follow the Gallbladder Flush week.  Since what typically happens after a six-day cleanse, is a six day binge!  I think I have eaten fast food every day this week, and the scale surely shows it!  Not that I care all that much anymore, since I know it will all balance out again.  Baby steps, after all.

So, I was rummaging through my cupboards, trying to figure out something sweet to make, without running to the store for some hydrogenated, high-fructose corn syrup-y goo.  I found a recipe for cupcakes, and quickly and easily changed it to be as gluten-free and dairy free as possible.

Here is my recipe for the above cupcakes:

-1 1/4 cup of white rice flour (gluten free)

-1 1/4 teaspoon baking powder

-1/4 teaspoon salt

-1/3 cup butter (a gluten free one made from olive oil)

-1 cup of organic sugar

-3/4 teaspoon vanilla

-1 egg

-3/4 cup of almond milk

Preheat oven to 375, and lightly grease the cupcake tins.

Beat the butter in a mixer for 30 seconds.  Add sugar and vanilla and mix well.  Add egg and mix for a minute.

Add dry mixture and milk to the other mixture and mix until well combined.  Pour batter into cupcake tins, filling to half full.  Bake for 15 – 20 minutes… less if it’s mini cupcakes.

For frosting, I used the 3 ingredients in the photo above to do a quick make-shift frosting. I spread a thin layer of butter, sprinkled some sugar on them, and drank the almond milk with it.

Why do I care at all about being gluten free?

There are many possible symptoms caused from gluten (typically found in our wheat products in the U.S.) intolerance.  Here is a list from Elisabeth Hasselbeck’s book, “The G Free Diet.”

-Abdominal pain and discomfort

-Anemia and other deficiencies

-Constipation

-Delayed puberty

-Diarrhea

-Discolored teeth

-Distension

-Excessive weight loss (with a large appetite), or weight gain

-Fatigue

-Gas

-Headaches

-Joint or bone pain

-Loss of dental enamel, tooth discoloration

-Missed menstrual periods

-Muscle cramps

-Reproductive problems

-Skin rashes, itchiness

-Smelly stool

-Sores inside the mouth

-Stunted growth in children

-Tingling or numbness in legs

And she mentions Long-Term Conditions Resulting from Untreated Celiac Disease (intolerance to gluten):

-Infertility

-Intestinal cancers

-Iron deficiency anemia

-Folate, potassium, and vitamin B12 deficiencies

-Osteoporosis

-Rheumatoid arthritis

-Thyroid problems

-Fibromyalgia

-Type 1 diabetes

I highly recommend her book to find out more about how gluten affects you if any of this sounds familiar.

Glutenous products also do not keep our appetites satisfied.  We end up wanting more of the food that is not so nutritious, and then gaining weight as a result.  The non-glutenous food would be more nutritious and satisfying.
